Last week, Duff Goldman stopped by the Food Network studios to answer fans questions live on the before the premiere of season 2 of Buddy vs. Duff on Sunday, March 15 at 9|8c. While here, he dropped a bit of baker knowledge about unexpected ingredients that will make your cakes super moist.
In general for a tender, moist cake, Duff says you should follow three rules:
- Make sure there is enough fat.
- Don’t over mix it.
- Don’t over bake it.
体育网上投注While these three steps will result in a moist, tender cake, he also has two secret ingredients to tip the scales in your favor.
For a recipe that is going to make two nine-inch round cakes, add two tablespoons of mayonnaise. Sounds weird, right? “I want you to think about something,” said Duff, “mayonnaise is made up of eggs and oil. The first two ingredients in cake are eggs and oil. It’s the same stuff, it’s just emulsified.” The emulsification will add a creamier texture and create a moist cake.
Leftover Mashed Potatoes
Don’t throw out your leftover mashed potatoes, add a few tablespoons to your cake batter! “Root vegetables, especially potatoes and carrots, hold moisture really, really well,” explained Duff. Adding root vegetables will make the cake more dense as well, which is a texture that Duff really loves.
